Ingredients:
  • 1 oz of semi-sweet chocolate, chopped
  • 1 oz bittersweet chocolate, chopped
  • 4 Tbs. unsalted butter, cubed
  • 3 Tbs. all purpose flour
  • 1/8 tsp. salt
  • 1/2 cup cups confectioner’s sugar, plus more for dusting
  • 1/4 tsp. pure vanilla extract
  • 1 egg – room temperature
  • 1 egg yolk – room temperature
Molten Chocolate Lava Cake. I like how chocolate filling oozes out of the center when you cut through the cake. Delicious!

Directions:

Preheat oven to 425 deg F.

Prepare 4 oz ramekins with non-stick spray.

In a microwave safe bowl, combine butter, semi-sweet chocolate and bittersweet chocolate. Heat in microwave until completely melted and whisk until well-blended.

Sift in confectioner's sugar. Add salt and mix until smooth.

In a separate bowl combine wet ingredients by adding egg, egg yolk, and vanilla extract. Mix well.

Add wet ingredients to the melted chocolate bowl. Mix thoroughly.

Sift all purpose flour into the bowl. Mix until well-combined.

Pour batter into ramekins.

Bake in oven for 13-15 minutes. Edges should be set and center soft.

Remove from oven and let cool for 1 minute.

Can be served right from the ramekins or poured upside down onto a plate. If preferring to serve from a plate, run a knife around the edges to separate from the bowl so that it slides onto the plate.

  2. If you have ever tried dieting before, you know that there are certain foods that seem impossible to give up. There is a mental connection that attaches them to good feelings, and so we call them baked comfort food. Everyone's comfort foods are different, but there are some common ones that most people enjoy and have a hard time giving up.
