Pumpkin Cheesecake Bread

This pumpkin cheesecake bread is just what you'll need for fall and the holidays. Your kitchen will smell soo good while baking it.

Ingredients for the Pumpkin Bread:
  • 2 Cups canned pumpkin
  • 4 Eggs
  • 1 1/2 Cups flour
  • 3/4 Cup light brown sugar, packed
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoons nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ginger

Ingredients for the Cheesecake Layer:
  • 8 oz. cream cheese, softened
  • 4 Tablespoons sugar
  • 2 teaspoons flour
  • 1 egg


Direction:

There will be 3 layers altogether, a bottom layer of pumpkin bread, a cheesecake layer in the middle and another layer of pumpkin bread on top.

So begin by preheating oven to 350 deg F. Prepare the bread loaf pan with Canola oil spray or just grease it with butter.

In a mixing bowl, add pumpkin and eggs and mix until smooth. In a separate bowl, add flour, sugar, baking soda, and spices. Combine well.

Slowly add in the dry ingredients into the pumpkin mix. Combine well into a smooth batter and set aside.

Now make the cheesecake layer by beating cream cheese, sugar, flour and egg in a bowl until smooth.

Assemble into the prepared loaf pan by spooning about half of the pumpkin bread batter and flattening it against the bottom of the pan with spatula or back of a spoon.

Pour cheesecake batter over the bottom layer of pumpkin bread. Flatten it.

Cover the top with the rest of pumpkin bread batter. Smooth out the top.

Bake for 50-60 minutes. Use a toothpick to test if done. Should be finished if toothpick comes out clean.
