Double Chocolate Banana Muffins

Most of us will have a bunch of ripening bananas in our kitchen at some point in time. Can't really eat them as they are because, ew! Instead of throwing them away, turn them into delicious banana muffins. As for what Bree Bennett did, she made them chocolate.

Double Chocolate Banana Muffins

Ingredients:
  • 1 1/2 cup all-purpose flour
  • 1 cup sugar
  • 1/4 cup baking cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1 1/3 cup mashed ripe bananas
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 cup semi-sweet chocolate chips
Directions:

Preheat oven to 350 deg F.

In a large mixing bowl, add dry ingredients together (flour, sugar, baking cocoa, baking soda, salt and baking powder). Mix until well-incorporated.

In a separate mixing bowl, add wet ingredients (mashed bananas, vegetable oil and egg). Watch the video below to get tips on how to mash ripe bananas using a potato masher. If you have other means to do so, use those. Mix until well blended.

Combine wet and dry ingredients in the large bowl. Stir until completely mixed.

Add chocolate chips and fold them in completely.

Prepare a muffin tin by either lining up the mold with paper baking cups or non-stick cooking spray. Fill each mold up to 3/4 full.

Bake for 20-25 minutes. Check with a toothpick to test if done.
